Homemade fluffy candy

I have a strange weakness for marshmallows — their light-yet-chewy texture, their ephemeral flavor of vanilla. (When I had to suffer through gooey fluoride treatments at the dentist as a kid, I always chose the marshmallow flavor.) They’re perfectly tasty on s’mores, although I prefer to eat them freshly caramelized off the roasting stick.

Homemade mallows are easy (albeit messy) to make, and are far less chemical-tasting than the commercial kind.

Folks who had no idea you could make an industrial extruded product at home will be charmed by fluffy cubes of the homemade version. Best of all, however, is the homemade mallow’s superior meltingness in a mug of hot cocoa.

A friend made these recently; it can be hard to get the texture right, but once the process is perfected they can be wonderful! She dusted them with cocoa, which was excellent.

These go into my recipe queue...I love marshmallows--in cocoa, toasted, or--in a sugar lacking pinch--just straight from the bag of chemical-tasting ones (the kind of guilty pleasure I feel suitably ashamed of!). I’m sure these will be a vast improvement...

This would be fun to make with the kids. As much as they have to have them in their hot cocoa, this will be perfect!

Wow, it had never occurred to me I could make my own marshmallows! I think this would be a blast for my kids, especially since it’s kind of like an edible science experiment.

I have had homemade marshmallows once and they were incredible. I am so glad to come across a recipe where I can try my hand at making them myself.

I have been wanting to make homemade marshmallows for about a year now. Last year my co-worker brought in orange and lemon ones and they were really good.

I’m not a big marshmallow fan although I like them in krispie treats and smores but these sound tasty.

My neices love marshmellows, these would be cool to make with them and I’m sure at easter you could use cookie cutters to make little chicks and color them.

I wanted people to know I received my win today- I love the Cookbook! Thankyou for sending me a new edition - the 75th edition of the joy of cooking- thankyou so much for being so awesome in sending it out, and thankyou and Merry Christmas or Happy Holidays to all who contribute and make this site so amazing to come to learn, create and be entertained. So far I have made three of the items from the sweet 16..we had amazing time making marshmellows. The fudge was amazing and really for the price- the gingersnaps were so much better than the store bought...so thankyou all for your recipes!

Until recently I never even knew you could make your own marshmallows - I always thought it was some very elaborate process, you would need a machine that was specially designed, have to employ some elves, ...?!
This recipe take the intimidation away and it would be so fun to give them as gifts. Very unique.
