Cinnamon oil prevents mold

A new kind of packaging for bread, introduced by researchers in Spain, may prolong the freshness of bread by up to 10 days. The secret? Cinnamon oil. This environmentally friendly packaging — called “active packaging” — relies on antimicrobials to attack bread mold, instead of other schemes such as ultraviolet light, sterile packaging, and the use of chemical preservatives.

Using cinnamon as a preservative is nothing new. The egyptians used it along with honey to cut down the prevalence of infections in head wounds...tasty!
