Sam Fromartz beats the pros

Sam Fromartz, the blogger behind Chews Wise, recently apprenticed with a traditional bread-baker in Paris. He chronicled the amusing, floury results for the travel magazine Afar, and then added his own, scaled-down version of the bakery’s master baguette recipe to his blog. “Surprisingly, it is the top item on Google for ‘baguette recipe,’” says the modest Fromartz. Not surprising, really: his loaf beat out those of professional bakers in a Washington, D.C., contest. Try it for yourself at home.

This is a topic easily debated forever, but after several years spent eating way too many baguettes in Southwest France, I gave up on finding any when I moved back to San Francisco. I didn’t feel like learning to make my own, either. Then I discovered Canyon Market in Glen Park in San Francisco. I don’t know how they make it taste like “the old country” but it brings me back every time...
