Here at Culinate, we’ve occasionally challenged readers to try to eat better for an entire month — getting more whole grains into our diets, for example, or more vegetables onto our plates. On October 1, readers of several food websites joined blogger Andrew Wilder, of the blog Eating Rules, to avoid all processed food for a month.
As Pete Wells noted in the Diner’s Journal blog, “unprocessed” means “‘any food that could be made by a person with reasonable skill in a home kitchen with readily available, whole-food ingredients.’ In theory, this means, among other things, no preservatives, no soy derivatives, no high-fructose corn syrup, no white sugar. In practice, [Wilder] encourages people to decide what the word means to them, and take the challenge on their own terms.”
