How (or if) you cook vegetables makes a big difference in the nutritional punch they pack — so says an article in today’s New York Times. Although processing and cooking your veg is usually beneficial, with regard to some nutrients it’s not. The bottom line? Eat a variety of cooked and raw vegetables — every day.

A good article - thanks for pointing it out!
People get a bit “can’t see the wood for the trees” about the whole raw/cooked debate. By far the most important decisions is choosing to have the vegetables to start with. It upsets me when people are put off so much by information overload that they just decide not to! Most people would be better off eating a few more portins than fine tuning exactly how to cook them
