In American Pie: My Search for the Perfect Pizza, Peter Reinhart (The Bread Baker’s Apprentice) tracks the history of pizza as he travels around Italy and across the States. The book, which is graced with handsome black-and-white photos and sprinkled with actual dialogue (some of it quite philosophical), is divided into two distinct sections: “The Hunt” (in which we accompany the author from Naples to New Haven in discussions with many friends and acquaintances about what makes the perfect pizza) and “The Recipes” (which contains dozens of sauce, crust, and topping combinations and ample tips from this earnest and dedicated pizzaiolo).
