Mocha Cream

From the book Maida Heatter’s Book of Great Desserts by

Ingredients

1 cup heavy cream
¼ cup confectioners’ sugar
1 Tbsp. instant coffee

Steps

  1. In a chilled bowl with chilled beaters, beat the heavy cream only until it begins to thicken. Add sugar and coffee, and beat until thickened to the consistency of a heavy custard sauce, not stiff.
  2. Pour or spoon on top of puddinglike desserts, such as Chocolate Mousse Heatter, and serve.

I have made this mousse for years and it has never failed to please. This recipe and the chocolate chip cookie are another favorite recipe.
