Bits of roasted cocoa beans are a perfect complement to the nutty flavor of buckwheat. Since buckwheat flour is low in gluten, it works like cornstarch (but with flavor!) to give cookies a fine sandy texture that is crunchy yet very tender. Serve the cookies with blackberry sorbet.

| ½ | lb. (2 sticks) unsalted butter, softened | |
| ⅔ | cup sugar | |
| ¼ | tsp. salt | |
| ⅓ | cup cacao nibs | |
| 1½ | tsp. pure vanilla extract |

These do sound interesting - I’ve had buckwheat bread and pancakes, which I do like, but not something sweet with buckwheat like cookies. Will have to try!

Not sure about this one. The flavor profile may be too ‘adult’ for me, but, then again, I’ve never known Alice Medrich to steer us wrong.

I’ve had buckwheat pancakes and they’re quite good, so I think these cookies would be too. They’re very different from the standard cookies we bake and I think they’d be an excellent addition to the lineup.

Hey, just wanted to say that while the intro describes buckwheat as “low in gluten” that should be “gluten-free.” Buckwheat is totally unrelated to regular wheat and does not contain gluten.
