The Mushroom Forager’s Cottage Pie

Serves 4

Introduction

A layer of savory meat topped with mashed potatoes: when made with beef, it’s known as cottage pie, and when made with lamb, as shepherd’s pie. The French call it hachis parmentier, a hash named in honor of the man who brought France potatoes: Antoine-Auguste Parmentier. Because this is prepared with beef, it is technically a cottage pie. But because it is so full of mushrooms, it seems that the cottage must belong to a mushroom forager.

Ingredients

5 medium white potatoes, either floury or waxy, peeled and cut into chunks
~ Salt
½ to ¾ oz. dried porcini mushrooms
1 dried shiitake, stem removed
2 cups vegetable, beef, or chicken broth
3 garlic cloves, thinly sliced
~ Pinch of freshly grated nutmeg
1 Tbsp. olive oil, or as needed
1 onion, chopped
1 lb. lean ground beef
~ A few generous shakes of soy sauce
4 to 6 Tbsp. sour cream
4 Tbsp. butter
3 Tbsp. low-fat milk, or as needed

Steps

  1. Place the potatoes in a saucepan with salted water to cover. Bring to a boil, then reduce the heat to medium and cook until they are just tender, then drain. This can be done up to two days ahead of time.
  2. Place the porcini and shiitake mushrooms in a saucepan with the broth to cover. Bring to a boil, then reduce the heat and cook, uncovered, until the mushrooms are very rehydrated. Let boil for 5 to 10 minutes to reduce the volume of liquid and intensify the flavor. Add the garlic and nutmeg, and remove from the heat to cool. This can also be done up to two days ahead of time and kept in the refrigerator.
  3. In a heavy nonstick skillet, heat the olive oil over medium heat, then add the onion and beef and cook, stirring and breaking up the meat, until the onion is limp and the meat browned in spots.
  4. Mash up about 2 potatoes’ worth of potato and add it to the pan. Pour off the liquid from the mushrooms, then chop the rehydrated mushrooms and add them to the skillet with the meat sauce. Cook over high heat until the liquid has almost evaporated and the whole is savory and delicious. Remove from the heat and stir in first the soy sauce and then the sour cream. This can be done up to two days ahead of time and kept in the refrigerator.
  5. Preheat the oven to 400 degrees. Make a layer of the meat mixture in the bottom of a 9-inch pie or cake pan. (I like round, but an oval, square, or rectangle is fine, too.) Mash the remaining potatoes with 3 tablespoons of the butter and the milk. Spread on top of the meat mixture, and cut the remaining tablespoon of butter into bits, then poke the bits into the top of the potato layer.
  6. Bake for about 25 minutes, or until the top is golden in spots and lightly browned around the edges. Serve hot.

Potatoes are the food of life. Rich, poor, everyone eats potatoes, baked, boiled, braised, roasted, grilled, fried, mashed etc, all good!

If cottage pie is beef, shepherd’s pie is lamb, what would you call something that is made with a stuffing bottom crust, turkey, gravy, veggies, and cheese, with a mashed potato topping? At our house this is the ONLY way we eat holiday leftovers, and the BEST!

I love the fact that nutmeg and cloves are used. I often use garam masala in dishes to add an exotic kick. This sounds like a great change to shepards pie. Quick while its still winter!

I didn’t have many of the ingredients to make this exactly (plus I wanted to do it vegetarian), but I did use mushroom broth and then thickened it with sour cream. It was awesome. I had celeriac and not enough potatoes, so I made the mash go further with some of the celeriac, and then topped it all off with a tasty paprika smoked cheddar. DE-licious. Thanks for the inspiration, and it sure was handy to use sour cream rather than deal with making a roux and bechamel (which is what I would have done otherwise).

This sounds great, but I agree with another poster. I’d add more mushrooms. I might also substitute ground turkey for beef to make it lighter.

I’m looking forward to using this recipe the next time I harvest an armload of wild mushrooms. I’ll substitute 1 lb. of sauteed chantrelles for the lean beef, porcini and shiitake.

Thanks for the explanation. I always thought that a beef/potato pie was shepherd’s pie, now I know better. This sounds delicious. I haven’t made this in a while but this sounds so good with the mushrooms that I’m going to try it. Should be delicious!

My mom and I used to forage for mushrooms in the early mornings in “the good old days” in the forests up behind Virginia Beach. We would bring home a large galvanized bucket full!

She would saute them with bacon to go on toast for breakfast (even for the lazy sods who slept in and didn’t help gather).

Then she’d make a Shepherd’s Pie with ground leftover leg of lamb and mushrooms.

Oh, my, how delicious it all was!
