Almond Cookies

From the book Retro Luau by Richard J. Perry
Yield 4 doz. cookies

Ingredients

1 cup all-purpose flour
1 cup almonds, ground
¼ tsp. baking powder
~ pinch of salt
½ cup butter, softened
¾ cup sugar
1 egg white
½ tsp. almond extract

Steps

  1. Sift together flour, baking powder, and salt. In a separate bowl, cream together butter and sugar. Add egg white and almond extract, mix well. Add the nuts in flour mixture and chill for an hour. Shape into ¾-inch balls and place on a cookie sheet. Flatten slightly with the palm of your hand. Bake at 350 degrees for 12 to 15 minutes. Be sure they don’t brown.
