Ingredients
| 1 | lb. soba noodles |
| ½ | cup carrots, grated |
| ¾ | cup green onions, finely chopped |
| 2 | cups bean sprouts |
| 4 | cloves garlic, minced |
| 1 | Tbsp. ginger, minced |
| ½ | cup soy sauce |
| 3 | Tbsp. sesame oil |
| 3 | Tbsp. rice wine vinegar |
| 2 | Tbsp. honey |
| 1 | tsp. chili sauce |
Steps
- Boil soba noodles for 1 to 2 minutes until moist and pliable. Rinse in cool water and drain well. Sauté carrots in sesame oil for 2 minutes, add green onions, and cook for 1 minute more. Transfer to a large bowl and add all ingredients except noodles. Mix well, then add noodles and mix well again. Chill for about 2 hours and serve.
