Pillows of fall

The pickup: We’re coming to the end of our CSA subscription for the year, and the delivery is definitely feeling more autumnal. Last week, we got two beautiful (and big!) acorn squash, along with parsley, kale, leeks, peppers, melons, and tomatoes.

The results: The arrival of the squash, a garage-sale find of a vintage ravioli press, and the proximity of Pastaworks all came together nicely to produce an evening of squash ravioli.

Hearty acorn squash.

First the squash was cut in half and roasted until the flesh was tender and a little caramelized. It went into the food processor with a hunk of Pecorino cheese, a grating of nutmeg and the tiniest bit of milk, just enough to make it all come together. The salty, piquant cheese worked really well with the sweet squash.

The new ravioli maker made fast work of filling the herb-flecked pasta sheets. After a quick boil, a little olive oil and some crisp fried sage leaves finished the dish nicely.

Of course, there was tons more filling than ravioli, so for the next day’s dinner, I thinned it out with vegetable broth for a warming squash soup.

I love all types of squash, and typically use winter squash for creamy, hearty soups. Mmm!

I have a sweet bread recipe that uses grated squash. I love to make in the fall/winter and especially enjoy it for the holidays. Add a glaze and I have the perfect coffee break accompaniment.

I like to stuff the squash halves with a tuna salad mixture and bake until tender.

I love making a creamy bisque with cinnamon and cardamom. This soup is hearty enough to eat alone with crusty bread and goes well with a sharp cheddar sandwich.

We love to slice the squash in half, lengthwise, than add butter and brown sugar, than we bake in the oven until soft. We love it. (Even the kids love it).

I love to make a creamy, cheesy risotto and serve it in acorn squash halves. Sometimes risotto seems like just a lump on a plate, and this brightens it up.

Ed Bruske (TheSlowCook) recently published some healthy muffin recipes on his blog, including one containing sweet potatoes and grated carrots. I substituted cooked squash for the sweet potato, as I had a lot on hand, it was somewhat insipid, but I didn’t want to donate it to the compost pile. My kids love them!

cut up into small cubes and cooked overnight with porridge in a slow-cooker for a hearty, sweet, creamy breakfast treat. Picture bits of soft butternut up against steal-cut oats, brown-sugary bahri dates, toasted walnuts, and a splash of whole milk. Bring on the winder squash.

I’m a huge squash fan. Acorn squash I like in the traditional way -- cut in half, baked with brown sugar and butter. Zucchini and yellow squash I like to cut up and steam, then serve with sauteed onions and Parmesan cheese. Yum!
