Apple Pecan Cranberry Crisp

Introduction

Bluebird CSA shares include delicious baking apples used for Apple Pecan Cranberry Crisp. This is a favorite of our market on chilly autumn days and everyone says it smells so good baking. This variety of apple is crispy with a cherry flavor and is harvested from a local Apple Farm. Delicious served at our Farmers Market Lunch. http://www.bluebirdmarket.com

Ingredients

4 Arkansas Black apples, sliced
1 cup fresh cranberries or craisins
½ cup extra virgin olive oil
3 t. flour
2 cups old-fashioned oatmeal, uncooked
2 t. apple pie spice
2 t. cinnamon
½ cup chopped pecans

Steps

  1. Place apples, pecans and cranberries in 9” baking dish. Combine oil, flour and spices and pour over fruits. Sprinkle on oatmeal and press into liquid. Bake at 350 until bubbly about 1 hour.
