Turnip Burrito

Introduction

Bluebird CSA turnips are low GI and delicious in a burrito.

Ingredients

~ turnips cut into cubes
~ Mexican Artisan Cheese Blend
~ Pinto Beans
~ sea salt
~ pepper
~ Extra Virgin Olive Oil
~ garlic

Steps

  1. Toss turnips in garlic, sea salt and pepper.
  2. Bake in oven until fork tender.
  3. Add to tortilla with beans and cheese.
  4. Heat in oven until cheese melts.
  5. Enjoy.
