Low Country Boil

Introduction

Low Country Boil is a relaxed atmosphere beach, tailgating or picnic favorite, famous in the low country of coastal Georgia. It can be made on the stovetop with half a recipe or outdoors in a turkey cooker. A relaxed atmosphere idea using farm fresh sweet corn in your Bluebird CSA farm box.

Ingredients

10 whole red new potatoes, rinsed
1 package of Italian sausage cut into 3” lengths
1 whole Vidalia onion
6 ears of sweet corn, cleaned and broken in half
1 lemon, cut into quarters
½ cup Old Bay Seasoning
3 lb. of shrimp in peel
20 whole bay leaves
~ splash of vinegar
~ dash of sea salt and cracked pepper

Steps

  1. Fill a 30 qt. turkey cooker with strainer about ⅔ filled with water
  2. Add Old Bay, lemon, onion, salt, pepper, vinegar, bay leaves
  3. Bring to boil and add new pototoes and sausage boiling for 20 minutes
  4. Next add corn and boil for another 10 minutes
  5. Last add shrimp and cook no more than 3 minutes
  6. When the shrimp float to top, you are done
  7. Strain out water and pour onto table lined with newspaper
  8. Sprinkle on more Old Bay and serve with cocktail sauce and napkins
