Winter Yellow Squash Casserole

Introduction

Bob James of James Family Farm prepared this delicious and simple Yellow Squash Casserole from late fall garden squash. The potatoes absorb the flavors and make a delicious addition.

Ingredients

6 Yellow Squash
2 Idaho Potatoes
1 Vidalia Onion
~ Butter to taste
~ salt and pepper to taste
3 Sweet Basil leaves
~ Optional:
~ peppers, hot or bell
~ cheese

Steps

  1. Cut squash, onions and potatoes into cubes. Mix together. Add butter to taste and no water.
  2. Add basil, salt and pepper.
  3. Cook about 10-15 minutes in microwave. or you may cook in regular oven on 350 degrees for about 25 minutes. Also you may cook in a frying pan with olive oil.
