Thanks, everyone, for participating in the Vegetable Challenge with me. I am inspired to head into winter eating more veg than last year; I hope you are too. Since we started the Challenge, the economy’s gone cuckoo; vegetables may prove to be the best buys out there.
Watch for a VC reprise in February; we can see how we’re all managing with our winter squash and cabbage. Meanwhile, though, here are the prize winners for the Vegetable Challenge giveaways:

I don’t mind the squash (or the kale), but I sure ain’t looking forward to the cabbage. Unless it’s in kimchi.

Thanks for the challenge! Being the anal type, I kept a food log (although I missed the first 5 days). My half-cup measurements were only guesses, but out of 26 days, I estimate that I hit the 5-servings-a-day on only 13 days - exactly half. This is an eye-opener for me since I’m a regular at the farmer’s market and excited about all the seasonal produce. There was only 1 day where I didn’t have at least 3 servings of veggies, and a couple days when I had more than 5. The best days were the ones were we cooked at home; the worst the weekend days when we had a late breakfast and no lunch, then went out for dinner. I think I would do better on a combined fruit/veggie challenge. Any thoughts of doing that one?

JeanE23, I like that idea of a fruit and vegetable challenge. Maybe we’ll take make that the winter challenge! Stay tuned…
