Cornish Hens with Apricots and Prunes

I like to serve Cornish hens instead of a big chicken so there’s no fighting over who gets what piece. And the flavor of this recipe, the way the savory, sweet, and spicy all blend together -- ahhhhh! Even if you’re not Jewish you should try this. It’s a delicious way to get more fiber into your diet.

I love making gefilte fish. I grind the fish with seasoning and binder and poach it, and the best part is the improvisation involved. I have never planned ahead what kind of fish or seasonings I’ll use- I let the fish counter be my guide. One of my favorites was salmon and rainbow trout with ginger and lemon.

When I lived in the Bay Area I used to cook an Easter / Passover dinner for my friends of multiple religions. One of the most popular dishes was the vegetarian passover quiche using a Julie Child Onion Quiche recipe and substituting a mashed potato pie crust:

I made a new matzoh ball recipe last year that was a huge hit. Everybody argues over the best matzoh ball - fluffy or firm, so I decided to try something different. I was afraid to play with tradition but it worked. The recipe is from the great book “Matzoh Ball Gumbo” by Marcie Cohen Ferris and is called Creole Matzoh Balls. Saute 1/4 c. finely chopped onions in 1 T. oil for 2 to 3 minutes. Stir in 1/4 c. chopped parsley and 2 to 2 1/2 teaspoons Tony Chachere’s Creole Seasoning and cook, stirring, for 30 seconds. Scrape the onion mixture into a bowl, let cool slightly. Add 2 large eggs and 1 more T oil. Mix with a fork until the eggs are well broken up. Add 1 packet from a 5-ounce package of matzoh ball mix and stir till blended. Cover and refrigerate for 20 minutes. Bring a large saucepan of water to boil and add a big pinch of salt to the water. Shape matzoh ball mixture into 12 balls and drop into water. Cover and simmer for 15 minutes until cooked through. I hope others like this recipe. And I hope I win the Charles Chocolate! I am a huge fan!
