Mango Lassi

From the collection
Yield 1 to 2 glasses

Introduction

This might be the best beverage in the world, especially on a hot summer day. If your fresh mangoes are stringy, strain the pulp first to eliminate the fibers. You can also make this with canned mango pulp, which you can find at Indian grocery and specialty stores. To make more, just multiply the recipe. All measurements are to taste.

Ingredients

½ cup mango pulp
1 cup plain yogurt
¼ to ½ cup cold water
~ Sugar to taste (optional)
¼ to ½ tsp. ground cardamom

Steps

  1. In a blender, combine the mango pulp and yogurt. Add water until the mixture reaches the desired consistency. It should be thin enough to drink, but still a little thick, like a smoothie. Add sugar and cardamom to taste. Pour into glasses and serve.
