This is one of my son’s favorite breakfasts, which I came up with to combat his infatuation with Egg McMuffins. Though he’s right that it’s best with freshly baked biscuits, reheated leftover biscuits make a perfectly acceptable substitute.

The only thing this is missing is a slice of cheese melting over the egg to take it over the top! I also put a slice of summer tomato on when I have it. Soon I hope!
