Italian Parsley Pesto

From the collection
Yield 1½ cups

Introduction

Good on pasta, this is also an excellent crostini topper.

Ingredients

1 large bunch Italian parsley, stems discarded
1 cup walnuts
2 to 4 cloves garlic
1 cup grated Parmesan cheese
1 cup extra-virgin olive oil
~ Salt and pepper to taste

Steps

  1. Wash and drain parsley.
  2. Toast walnuts on a baking tray in a 400-degree oven for a few minutes, stirring frequently, until fragrant and browned.
  3. Place parsley, toasted walnuts, garlic, and Parmesan into bowl of food processor and pulse until well combined. Drizzle in olive oil and continue pulsing until the mixture has emulsified, then season with salt and pepper. Toss with cooked pasta.

I had never tried Italian parsley before but got some as part of a vegetable co-op. This recipe was easy and delicious. In fact, I didn’t have any Parmesan cheese so I used a bag of four shredded cheeses I just happened to have on hand. Haven’t tried it on pasta yet because I tasted it on crackers and it was so good I kept eating them. Tomorrow I am going to try using it as a filling for wantons.
