Raspberry Mojitos

From the collection
Serves 6

Ingredients

2 cups loosely packed mint leaves
~ Juice of 2 medium limes (about ¼ cup)
½ cup sugar
¼ cup Raspberry Coulis
9 oz. raspberry or white rum
3 cups soda water

Steps

  1. In a small pitcher, combine the mint, lime juice, sugar, and about 1 cup ice cubes. Using a wooden spoon, “muddle” (see Note) the mixture about 3 minutes, until the mint is bruised and aromatic and the sugar is completely melted. Add the coulis, rum, and soda water, and serve immediately over ice.

Notes

To muddle the mint mixture, use a large spoon (a wooden spoon works well) in an aggressive up-and-down motion. Muddling creates friction to dissolve the sugar and bruise the mint, which releases the herb’s fragrant oils.
