Hot Chocolate with a Milk Base

From the Chuck Siegel collection
Serves 8
Total Time 15 minutes

Introduction

This simple and rich milk-based hot chocolate is a cold-weather classic from Chuck Siegel of Charles Chocolates.

Ingredients

8 cups whole milk
1 cup water
18 oz. bittersweet chocolate (70 percent cacao)
1 cup granulated sugar

Steps

  1. In a large saucepan, bring milk, water, and sugar to a boil, stirring to dissolve the sugar. Add the chocolate and mix with a whisk to dissolve. Heat until just simmering, then remove from heat.
  2. In batches, pour the hot chocolate into a blender and whip the liquid into a froth. (Place a folded dishtowel over the blender lid to prevent hot liquid from spraying out around the edges.) Serve in small mugs.

I love the hot chocolate with the milk base. It reminds me of my childhood days. My grandmother would make it for us every evening before bedtime.

I remember coming inside after helping to shovel the driveway and my mom would fix us a nice mug of milk-based hot chocolate, even better if she had marshmallows in the cupboard.

My favorite hot chocolate memory is from when I was a little child, and mom would make us hot chocolate when we came in from playing in the snow. I remember she always served it in these brown mugs with white cowboys on them. :)

Cocoa and toast was my favorite breakfast as a child. I still enjoy it, but now I make it with organic skim milk. It’s still delicious.

I love dark hot chocolate with milk on a cold, snowy day.

My warmest memories of hot chocolate was usually at home with my dear mom and sisters and brothers, that was one of the treats that we could have. We always would put the giant marshmallow on top.

Hot chocolate was always ready on cold days and was always a staple in our house (still is).

My earliest memory was sitting in a high chair drinking hot chocolate, waiting for the rest of the kids to come back from a day of sledding.

It reminds me of after school times with my kids--They loved the hot chocolate and I loved hearing the stories of their day.

When my sister and I were children we’d get on my mother’s nerves A LOT! On a chilly winter day, she made us some hot chocolate. While we were waiting for it to cool down enough to drink, WE REALLY GOT ON HER NERVES (A LOT!!!) She told us to “go out and play in the street!” Instead...we decided to put on our new white tee-shirts, take the hot chocolate with us (and several marshmallows) and went outside to play a game we just invented: ‘Toss the Marshmallow Into the Chocolate and Throw Them at Each Other’s Tee-shirts.’ We invented a new ‘style’ that day as my mother couldn’t get the stains out!

Of the three hot chocolate recipes, there’s no doubt that Hot Chocolate with a Milk Base is the one for me! My first memory of hot chocolate is when I was about five years old, and came in from sledding. Thanks for the offer!

My son came home with an illustrated drawing that said, “I love hot chocolate because its warm and I share it with my dad.”

I hope he remembers that moment always....

I used to go to Ice skate in Central Park. After skating I would go to the Oak room at the Plaza Hotel and have a hot chocolate.

My senior year of high school I used to go every day with my best friend to buy a hot chocolate. It is a great high school memory.

My favorite memory of hot chocolate is picking out the marshmallows and watching them melt.

Mom making hot chocolate for the friends and I after fierce snowball fighting, we’d all sit at the table talking about our hits and near misses...

My fondest memories is having a cup of hot chocolate on cold winter nights in Maine. My grandmother would make it with melted chocolate and warm milk. She had a old fashioned wood stove and the smell of the hot chocolate, the wood burning in the stove made me feel safe against the blowing wind and snow outside.

I always enjoy hot chocolate and it doesn’t even have to be cold outside. Put some marshmallows in it and I am in heaven. Something about chocolate makes you so “warm and fuzzy” inside...definitely comfort food and also makes you feel good as a drink. Happy St. Paddy’s Day everyone. Going to dip my green cookies in my hot chocolate when I get home today from work. ;-)

Grandma heating milk in a saucepan was always the beginning of a special chocolate treat!

My favorite hot chocolate memory is when I was little my mom used to make it with marshmallows and I used to love it so much. We would drink it during the winter months and I couldn’t get enough of it. I also remember making some when I was in Girl Scouts and I had a great time going to Girl Scouts.

My favorite hot chocolate memory is of my two rosy faced children coming in from outside in the winter. After sliding with them down our homemade “luge”, they would sit with me and drink the hot chocolate that I had just poured for us. Thanks for the wonderful opportunity.

32. by anonymous on Mar 18, 2008 at 12:12 AM PDT

A favorite is how now my adult children think hot chocolate is to die for, as when they were small it was so iffy.

33. by Theresa Wagner on Mar 18, 2008 at 4:59 AM PDT

My favorite hot chocolate memories were of the snow days we’d get when I was young. No school meant hours playing outside in the snow and then coming inside and warming up with some hot chocolate made with milk, the only way mom ever made it.

I have fond memories of making my daughters hot chocolate before heading off to school.

One my favorite memories growing up was when mom had hot chocolate ready for us when we came in from playing in the snow. Now I do it for my kids.

36. by sharon cerasoli on Mar 18, 2008 at 7:53 AM PDT

one of my fav memories is after coming in from either sledding or making a snowfort/snowman and having homemade hot chocolate...
nothing like hot cocoa to warm you up, after getting all rosy cheeked and invigorated!

37. by ljs39 on Mar 18, 2008 at 8:21 AM PDT

Hot cocoa is a family tradition that hopefully will be passed down for generations to come. I love making my family hot cocoa during the cold winter days.

38. by Betty C on Mar 18, 2008 at 10:14 AM PDT

This reminds me of the hot chocolate I used to make for my children when they were little. They always looked forward to warming up after playing in the snow.

39. by kathleenyohanna on Mar 18, 2008 at 10:31 AM PDT

I went on a retreat last year and I was assigned the supervision of the sledding area. Of course the teenagers started a snowball fight and it was my job to make sure no one got hurt. When we came in I had the most delicious cup of hot chocolate in the world. Ahhhh relaxing.

40. by sunnymamak on Mar 18, 2008 at 11:07 AM PDT

My favorite hot chocolate memory is drinking it while camping. I always bring hot chocolate on camping trips because on those cool nights or mornings, nothing is better that warming up with some freshly made hot chocolate.

41. by sylvieA on Mar 18, 2008 at 11:39 AM PDT

My favorite hot chocolate memory is not as a kid...it’s as a mom. The first time I made hot chocolate for my daughter on a cold day of playing in the snow, I felt like all was right with the world and everything was as it should be.
