Mint Pesto

Yield ½ cup

Introduction

Serve this sauce as a spread for Lamb Burgers.

Ingredients

2 cups fresh mint leaves
4 garlic cloves
¼ cup extra-virgin olive oil
~ Salt and pepper to taste

Steps

  1. Put all the ingredients in a blender and blitz into a rough paste. Use on sandwiches or store in a closed container in the fridge for a few days.
