Introduction
Ingredients
| ½ | cup cucumber, peeled and roughly chopped |
| ½ | cup freshly squeezed lime juice |
| 2 | Tbsp. simple syrup (see Note), or more to taste |
| 5 | oz. dry sake |
| ~ | Ice cubes |
| 2 | cucumber half-moons, cut halfway through middle, for garnish |
Steps
- Place the cucumber in a mini food processor and pulse until liquefied. Pour into a cocktail shaker along with the lime juice, simple syrup, and sake. Add enough ice cubes to fill the shaker. Shake for 30 seconds to a minute, then strain into two martini glasses. Garnish each glass with a cucumber half-moon and serve.
Notes
To make simple syrup, place equal parts white sugar and water in a saucepan; heat until sugar dissolves, then cool before using. I often make more simple syrup than I need, using 1 cup sugar and 1 cup water; I store the extra in a jar in the fridge.
