This refreshing cocktail, adapted from Margaritas, Mojitos & More, is perfect when you want something light. For a first course, pair it with fresh spring rolls or chicken satay.
| ½ | cup cucumber, peeled and roughly chopped | |
| ½ | cup freshly squeezed lime juice | |
| 2 | Tbsp. simple syrup (see Note), or more to taste | |
| 5 | oz. dry sake | |
| ~ | Ice cubes | |
| 2 | cucumber half-moons, cut halfway through middle, for garnish |
To make simple syrup, place equal parts white sugar and water in a saucepan; heat until sugar dissolves, then cool before using. I often make more simple syrup than I need, using 1 cup sugar and 1 cup water; I store the extra in a jar in the fridge.
