Lime-Cucumber Saketini

Introduction

This refreshing cocktail, adapted from Margaritas, Mojitos & More, is perfect when you want something light. For a first course, pair it with fresh spring rolls or chicken satay.

Ingredients

½ cup cucumber, peeled and roughly chopped
½ cup freshly squeezed lime juice
2 Tbsp. simple syrup (see Note), or more to taste
5 oz. dry sake
~ Ice cubes
2 cucumber half-moons, cut halfway through middle, for garnish

Steps

  1. Place the cucumber in a mini food processor and pulse until liquefied. Pour into a cocktail shaker along with the lime juice, simple syrup, and sake. Add enough ice cubes to fill the shaker. Shake for 30 seconds to a minute, then strain into two martini glasses. Garnish each glass with a cucumber half-moon and serve.

Notes

To make simple syrup, place equal parts white sugar and water in a saucepan; heat until sugar dissolves, then cool before using. I often make more simple syrup than I need, using 1 cup sugar and 1 cup water; I store the extra in a jar in the fridge.
