Oatmeal with Apples

Introduction

This recipe originated with my brother Jamie, who used to make it when he lived and worked at a fire station while going to college. Over the years I’ve embellished it with a variety of condiments.

Ingredients

Oatmeal

4 cups water
~ Pinch of salt
2 apples, cored and chopped
¼ tsp. cinnamon
~ Pinch of ground cloves
Tbsp. brown sugar
cups old-fashioned oats

Toppings

~ Milk
~ Brown sugar, maple syrup, or honey
~ Chopped almonds or hazelnuts
~ Raisins, dried cranberries, or cherries

Steps

  1. In a medium saucepan, combine water with a pinch of salt, apples, spices, and brown sugar. Bring to a boil, then turn down to a simmer and cook until apples just begin to soften. Stir in oats and continue to cook for 5 to 10 minutes, stirring occasionally to keep the oats from sticking to the bottom. (Cook less time for a coarser texture, longer for creamier.)
  2. To serve, divide oatmeal into bowls. On the table place a pitcher of milk and small bowls filled with your choice of sweeteners, chopped nuts, and dried fruit. Let each person garnish the oatmeal to his or her taste.
