Chocolate Ganache Frosting

Introduction

This is an easy frosting to make and a sure hit with chocolate lovers. Use on Carrie’s Chocolate Cake.

Ingredients

½ lb. high-quality semisweet chocolate
½ cup heavy cream
1 Tbsp. sugar
1 Tbsp. corn syrup
2 Tbsp. unsalted butter, cut into pieces the size of sugar cubes

Steps

  1. Chop chocolate finely. In a medium saucepan over moderately low heat, bring cream, sugar, and corn syrup to a boil, whisking until the sugar is dissolved.
  2. Remove pan from the heat and whisk in chocolate until melted. Whisk in butter until melted and the frosting is smooth. Transfer frosting to a bowl and cool, stirring occasionally, until spreadable.
