I’ve always liked the combination of flavors that comprise Cowboy Cookies — a hybrid oatmeal cookie with nuts and coconut. Here’s my own variation on a theme with dried cherries and dark chocolate.
| 1 | cup unbleached all-purpose flour | |
| 1 | cup whole-wheat pastry flour | |
| 1 | tsp. baking soda | |
| ½ | tsp. baking powder | |
| ¾ | tsp. salt | |
| ¾ | tsp. cinnamon | |
| 1 | cup (2 sticks) unsalted butter, softened | |
| ¾ | cup sugar | |
| ¾ | cup brown sugar | |
| 2 | large eggs | |
| 1½ | tsp. vanilla | |
| 1½ | cups old-fashioned rolled oats | |
| 1 | cup toasted pecans, chopped | |
| 1 | cup dried cherries | |
| 1½ | cups dark chocolate pieces or chips |

Great recipe Carrie. I like your style of substituting whole wheat pastry flour for a portion of the white flour. The oats, dried cherries, chocolate chips and toasted pecans are a wonderful combination. I found this recipe to be perfect, I wouldn’t change a thing! Thank you for sharing it.
