I’ve always liked the combination of flavors that comprise Cowboy Cookies — a hybrid oatmeal cookie with nuts and coconut. Here’s my own variation on a theme with dried cherries and dark chocolate.
|1||cup unbleached all-purpose flour|
|1||cup whole-wheat pastry flour|
|1||tsp. baking soda|
|½||tsp. baking powder|
|1||cup (2 sticks) unsalted butter, softened|
|¾||cup brown sugar|
|1½||cups old-fashioned rolled oats|
|1||cup toasted pecans, chopped|
|1||cup dried cherries|
|1½||cups dark chocolate pieces or chips|
