Roasted Peaches

Introduction

Fresh peaches baked with brown sugar, butter, and a dash of cinnamon taste like peach pie without the pastry. Of course, these are delicious warm with a scoop of vanilla ice cream, but they are also very good with Greek yogurt drizzled with honey or lavender syrup.

This is a good recipe to pull out of your hat when the peaches you bought are not so stellar that all you want to do is eat them fresh, dripping over the sink.

Ingredients

4 fresh ripe peaches, cut in half, pits removed
1 Tbsp. butter
2 Tbsp. brown sugar
tsp. cinnamon
~ Vanilla ice cream or Greek yogurt for serving (optional)

Steps

  1. Preheat the oven to 375 degrees.
  2. Place the peaches cut-side up in a baking dish. Fill each peach cavity with a bit of butter, brown sugar, and a dash of cinnamon. Pour enough water in the bottom of the pan to come ½ inch up the side of the pan.
  3. Bake 35 to 40 minutes, until the flesh has softened and the tops are browned.
  4. Serve warm, with the toppings of your choice.
