Having grown up in the Midwest (Missouri and Illinois), I am glad to see the region recognized for it’s culinary contributions. There is some delicious food to be found there, and not just in the larger cities.

This is so encouraging! I hope that more school districts, including ours in Virginia, will take the plunge and completely revamp food service.
