thank you so much for this wonderful article. I totally agree with Paula Wolfert slow cooking is the best for people who don’t have much time to cook. Also food is much better and tastier when cooked this way, because flavors and nutritional content are enhanced. Slow cooking is also very traditional in Southern Italy and I think because of the many Moroccan/Arabic influences.

Because of such an important event, the School is hosting special PASTA DAYS in Puglia.
On these days, cooking classes will focus on the preparation of traditional Italian pasta from Puglia: from egg tagliatelle; to durum wheat semolina orecchiette; durum wheat semolina cavatelli; stuffed ravioli and gnocchi.
