With the weather getting better I am trying to behave a little better when it comes to the calories consumed but obviously still want to enjoy!! So here is a good suggestion if you want to watch your calories a bit.. (perfect for lunch) Chicken Mango Salad
I woke up this morning feeling a little sorry for myself... I’m having a nasty cold, so my eyes are watering, my nose is running (like crazy) and I look horrible... So a very good reason to feel sorry for myself. On top of that I had to do some grocery shopping since there was hardly anything left to eat in the house, other then my own homemade mayonaise, but that doesn’t really have enough nutritional value to make me feel better, so I went out and got myself some nice (and very expensive) raspberries. It’s obviously not the raspberry season yet, so these are coming from Spain.
I had one of the desserts from last friday’s Italian dinner leftover in the fridge waiting for me to eat and today was - ofcourse - the perfect day for a little comfortfood. I crushed the raspberries and added a tiny bit of sugar, which is really not necessary normally, but I just felt like having something sweet today.
I just love the taste of these tiny little creamy wonders. I had made this before a while ago, so you can find the recipe here if you want to give it a try. I was a little hesitant at first because of the buttermilk in it. While I do love buttermilk I couldn’t really imagine how it would be. Due to the addition of lemon juice and lemon zest, it has already a lovely sour taste and the buttermilk just makes it complete. Can’t explain it, you have to try it. I really enjoyed my little dessert for lunch today, which did make me feel a little better. My nose is still running and my eyes tear up about every 5 minutes. You know that feeling when you have to sneeze really really bad, but then for whatever reason you can’t and that’s when you’re eyes start to run... :)
Ofcourse I also wanted to take a photo of my own mayonaise. I still had to season it, so I took a bit out of the huge jar and seasoned it with fresh parsley, lime, salt and pepper. I then like the effect of the mess the parsley had made on the chopping board so I used the same board as background. So it’s all natural!
Just for those who want to make some - very cheap - and lovely mayonaise here is the recipe:
Put a small splash of white vinegar in a bowl, add one eggyolk and some mustard. Stir those together untill it starts to form bubbles on the surface. Then slowly start to add sunfloweroil to it and keep stirring to make stir it all binds together. Once the mixture start to really bind you can start pouring the oil in a little faster and keep going untill you think your mayonaise has the right consistency. It’s as easy as that!
Apart from the fattening aspect of mayonaise I love it. Don’t you think mayonaise is fabulous? And it goes with soooo many things... I just wish it was healthy too...:(
