Karen Harbor, the Tea Spot Chef, shared this recipe with me, Mate-limon corn off the cob quinoa salad. It’s a good sidedish for Thanksgiving given the ingredients and it’s gluten free so it can take the place of dressing, not in the bird, of course, but as a somewhat starchy dish.
