Just made this last night! I don’t like mushrooms so I substituted bell peppers...and gosh, it was amazing! So delicious! LOVE the idea of pasta without tomato sauce! Had it with a sweet-ish white wine and homemade ice cream for dessert - perfect! Also, it looked SO beautiful...orange butternut squash, red peppers....pretty!

This article made me want to someday have a cow on our farm, allowed to live and mother naturally. In the mean time, it made me want to try to patronize farms that treat their cows like this. But they are so few and far between...=/

This article brought tears to my eyes. I have been a Type 1 Diabetic since I was very small, and I remember everything your daughter is going through, and everything my mother (and you) are battling. It was a constant fight...everything had to be calculated, and I hated that my life was never mine, it was numbers and carbs and blood work and doctors...and I won’t even go into what me leaving for college was like...but you are doing it right. My health is good, and your daughter’s will be, too.

This a wonderful piece...it made me feel good about my decision to join a CSA this year, despite all the money issues. I’ve had to be creative, but I am healthier and happier for it. Great read!

Actually, I’m a Type 1 diabetic, and I think the message of this article applies fairly directly to me. I side with Holly. I get so obsessed with eating the same things over and over because I already know their “numbers”, so I never branch out and try new fruits and veggies and things. I eat the same packaged food over and over and hate every bite. But we live in a world where those numbers are now readily available (yay internet!) so I am working very hard to walk through the farmer’s market, talk to people, go with what looks good, and come home and make a feast...of course, I carefully look things up before I eat them, but I am “listening to my gut” and becoming all the healthier for it! (Better blood glucose values, and weight loss!) Thanks for the encouragement, Marissa!
