I got charcuterie as a gift once. Not really a broad range of recipes, but it has some really useful recipes that I don’t have anywhere else.

I think something derived from culinary. Culinarian seems a bit unwieldy. Maybe culinare or culinaire or culinar? It is kind of hard to think of something that sounds good.

The combination of beans, polenta, and cheese makes this the perfect comfort food. Plus, since it’s vegetarian, I can pretend that it’s good for me. :)

Can I use soft whole wheat flour for the wheat flour portion, or is the gluten strength important here? I’d think the bread flour would compensate if I used soft wheat flour.
