I eat a low-sodium diet too and employ all of your suggestions. It’s such second-nature to me that I don’t even think about until I dine out and get “salted out.” I always have fresh lemons, limes, jalapenos and ginger on hand, which make a whole number of dishes pop with flavor. Quality oils and vinegars are great too. I agree with your suggesting about toasting foods too such as spices, nuts, and breadcrumbs which taste so much better for it. Though in full disclosure, I do add salt to my chicken soup and to spinach. I’m weak, I know. But a girl’s gotta have some salt.
