As a note to anonymous> I might just add that some chicken breasts are so huge these days. The ones I get a our Publix are enormous. So perhaps Ina’s are as well. And the 1 ts salt is kosher salt and therefore not as much as 1 ts table salt.

Haven’t made this one, but did make The Barefoot Contessa’s recipe. Other than substituting canned cannellini beans,as the raw ones just never got tender(That is even after 24 hrs soaked in water overnight),the recipe was followed with just a pinch of grains of paradise and it was sensational.Hers had a bit more to it than this one. Will make it again. Thanks for sharing.

Just wondering how many pounds for the sweet potatoes. They come in various sizes. Now that I have purchased a great scale, it would be great to know how much things weight for the recipes.

I only have an 8qt stock pot. Can I have the butcher cut the chickens so they fit? Don’t know if all the ingredients will fit. Hate to buy another pot.

I recently purchased a Rose by De La Montanya. It was a cabernet rose. It was fabulous. Much darker in color than most rose and so had a very robust flavor. Not heavy just more taste.

If I use quick cooking barley, will it effect the texture if I continue to cook the Sweet Potato, or wouldn’t it make any difference.

I believe we add the salt to the pot after boiling because at that time the salt won’t corrode the pot,especially if it is has any aluminum in it.

You don’t indicate whether or not the sausage is out of its’ casing.
Just also wondering if the fennel would be overpowering. Can I leave out the fennel seeds and just use the fresh fennel or visa versa?

Please tell me what size the dice is for the lamb. I generally feel that the word dice would mean small, not cubed. Are the vegetables the same size as the lamb?

Thanks. I too store flour and cornmeal in the freezer. One more question that I forgot to ask is that I have stoneground cornmeal. Do I need to get a different type that says fine ground?

This was a fabulous dessert. I added about 1/4tsp of espresso instant coffee to the infused cream/milk mixture and about 1 tsp. vanilla. Before I served it, I melted some dark choc in a plastic baggie and drizzled over the panna cotta. Then I added sliced fresh strawberries which I had sprinkled with sugar several hours ahead. Delicious.
