Forgot to mention the crispy prosciutto added to risotto. Place prosciutto strips on baking sheet at 400 degrees for 5-10 minutes. Use culinary scissors to snip into pieces. Add to risotto! YUM!
Pork Tenderloin from Trader Joe’s (it’s plain and not in a marinade) marinated in Pineapple Sake Soy Marinade along with home stirred risotto with roasted Butternut Squash (cubed and cut from Trader Joe’s) and a bit of goat cheese and roasted asparagus. Chocolate Peanut Butter Pie Tart from Martha Stewart’s “Everyday Food” from April or May for dessert.YUM!
Picked up a half flat of Hood Strawberries, chocolate croissants from Grand Bakery stall and went home to make some Peet’s coffee. Warmed up the croissants in the oven for a smidge. YUM!!!My girls will finish the strawberries before the day is over. Ha,ha,ha!
Making my own Banh Mi from the recipe on this site - nice french roll from New Seasons Market with rotisserie chicken, lots of jalapeno, fresh cilantro, sliced carrot, maybe a litte mayo...looks good!
Fresh swordfish pan seared with herbs, garlic, butter, white wine and lemon. Along with roasted asparagus (olive oil, sea salt) and some sort of brown rice and pepper salad from Whole Foods (I cheated, okay?). Plus plenty of chardonnay. Delicious!
Pancakes made with fresh blueberries and lemon zest, crisp bacon, warm maple syrup and hot Stumptown coffee. YUM!!!!
The Mingo chef (in Beaverton) uses “Riso Carnaroli” which is made by Riseria Merlano and sold at Zupan’s around here. (In the rice aisle, comes in a Tan/Brown box). Hope that helps!

Ground turkey with chipotle Tabasco, Major Grey’s Chutney, lemon zest and juice, sauteed chopped celery and Granny Smith apples and finely chopped parsley....grilled as a burger on a toasted Kaiser with sliced avocado....made them for husband and kids as I’m out the door for Bunco. They look and smell delicious!!!!
