I’m a mom, writer, recipe-writer, wannabe restauranteur and locavore. I try to cook with fresh, local produce as often as possible and am lucky to live in a wonderful area in northeastern Iowa where we have CSAs, several farmer’s market, a local organic grocery and a Buy Fresh, Buy Local program.

    Just made the best gazpacho, inspired by one I had at Legal Seafood in Boston: 1 cucumber, 1 avocado, 1 sm. cuke, 1 chile pepper, 1/2 tsp. old bay seasoning, 1 clove garlic, 1 can stewed tomatoes, 1 tbsp. lemon juice. Puree and yum.

    Vegan Oatmeal Banana Chocolate Chip Cookies

    Follow oatmeal cookie recipe. Take out cinnamon. Replace egg with very ripe banana. Replace butter with butter-flavored shortening. Use vegan choco chips. So awesome!

    Lighter Macaroni Salad

    Macaroni Salad
    1/2 lb elbow macaroni, cooked
    3 or 4 diced carrots, steamed
    1 or 2 heads of broccoli, steamed
    1/4 cup sugar
    1/4 cup nayonaise
    1/4 cup low-fat sour cream
    1/3 cup white wine vinegar
    4 oz. pepper jack cheese, cubed
