Started with salt-rising whole wheat bread and butter.. plus turkey sausages and a glass of O.J. Lunch was peanut butter on toast, a banana, and some milk. Afternoon snack of two applesauce muffins. Dinner was a sort of cassoulet...all made in the pressure cooker... white beans, garlic, tomato, and beef. Dessert was a chocolate cupcake with vanilla buttercream. Oh, and two glasses of Diet Pepsi.

Oooh Carrie, that sounds yummy. I’ll give it a try this weekend. I had never had chocolate granola either until I stumbled upon this Bare Naked Brand mix called Continental Divide. Extremely addictive.

Diabetes Modifications: It only has 2 Tbsp of brown sugar for the entire recipe, which is not a lot. Personally, I’d use the brown sugar. But, you could substitute brown sugar Splenda or the brown sugar twin stuff... or try something like agave syrup. Leave out the raisins if you’re diabetic. Instead, serve it with fresh berries. They’re lower on the glycemic index (less impact on blood sugar) and will up the fiber. To make it even more glycemic index friendly, use barley instead of oats. :)

I’d love to adapt this into a chocolate-coconut granola (yeah..I know...the illusion of health). ;) Any ideas??

This sounds wonderful. I’ve learned to cook some interesting Middle Eastern sweets from my MIL... some great Indian sweets from friends... and would love to learn more. I’m especially excited about the recipe for jian bing. What a great idea to include a DVD.
