I include this in my Lazy Sunday arsenal of recipies because it is about as lazy as a person can be in creating something delicious and edible. Not a practice I normally advocate, nine of the ten ingredients come from some form of a package. And lastly, I call it a “cassarole” because the layering part takes place in a 9x13” Pyrex cassarole pan.
Quantities can be left up to the eater(s) in this one.
-corn chips- I like Kettle brand because they’re thicker, have a rich, nutty flavor, and are also organic.
-refried beans- I like Bearitos brand because they are also organic and vegetarian. Black, pinto, any are good.
-onion
-(meatless)ground beef or turkey substitute- Yves is my favorite brand but there are many choices.
-(dairy-free)mozzarella or cheddar cheese subtitite
-(dairy-free)sour cream substitute- tofutti is the best!
-guacamole- you can make this or buy it from the store. But remember- there is only one “Lazy Sunday” in the week!
-olives- green or black
jalapenos- fresh or canned
hot sauce- I like “taco sauce” or you could use salsa
Directions:
Preheat oven to 325 degrees.
Layer corn chips first and then refried beans in your 9x13 baking dish.
Next, heat about 1 tablespoon of vegetable oil in a skillet over medium heat. Finely dice your onion and add it to the pan once the oil is hot. Saute the onion until translucent or for about 3-5 minutes depending on if you want it browner or not. Add ground beef or turkey substitute and saute until brown, about 5 more minutes. Layer this mixture on top of the chips and beans in your baking pan. Last, shred your dairy-free cheese and layer that on the very top.Put this deliciousness in the oven for about 25 minutes or until it gets all warm and gooey looking. Take it out of the oven and add sour cream, guacamole, sliced olives, jalapenos, and hot sauce or salsa to your hearts content. Serve and LOVE THAT LAZY!
Sunday is a sacred day at my house. It is the day we call Lazy Sunday. Lazy Sunday is the day we roll out of bed around noon, flop our groggy, crusty-eyed bodies onto the couch, and “Wake ‘n’ Watch” - watch movies before we’ve bathed, brushed our teeth, or applied deoderant. So you can see the problem that presents itself when, on schedule at about two or three pm, our stomachs turn into a chat room. I love the kitchen like its my mother, but the word “Lazy” here is an important one. This is the day when we still need a healthy, homemade meal, but when the task of changing our underwear is too much to be bothered with.
